How to make better tortillas!

Okay, I realize I've talked about corn tortillas before . . . but, I feel like I've finally perfected them. So, I figured I'd share what I did that made them SO much better with y'all!! :) 
  1. Use more salt. I used about a teaspoon for six tortillas. It helps gives them far more flavor once they're cooked.
  2. Use a metal tortilla press (something like this). It will make far thinner tortillas that you won't need to cook long. 
  3. Heat 20 seconds on each side. No longer. If you overcook them, they'll be dry and won't bend without cracking.  If your tortilla press is plastic, and your tortillas are thicker; you may need to cook them a couple seconds longer. But they won't be as bendable. :(
  4. Put them in a towel immediately after taking them them out of your pan/off your griddle. This will keep them moist and bendable until you're ready to use them. 
  5. Don't be afraid to add more water or more masa. If your dough is too wet, the tortillas won't come off the press. If it's too dry, they'll fall apart as opposed to pressing into a tortilla. The climate of your kitchen can play into the success of your results too, so just play with consistency until you've found what works best for you. :D
Here are a couple of my most recent tortillas with some refried beans. 
They aren't filled, they're just rolled up to show how bendable they are. :D

I hope these tips help y'all make better corn tortillas! There's definitely a learning curve in making them, but once you get the hang of it; they truly are simple to make. Plus, they taste a thousand times better than store bought tortillas once you get them right! :)

A Tortilla Tutorial

Hip, hip, hooray! We're making tortillas today!! ;)

Here's what you'll need:
  • Instant Corn Masa Mix (I like this one, but I'm using the Aldi version today. It's really not too different.)
  • Warm water
  • 1 gallon size Ziploc bag 
  • Salt
  • A tortilla press 


Now, today I'm making eight,  4-inch tortillas.
 
Meaning, I'll be combining 1/2 cup of the masa with 1/3 cup of warm water. Pictured below:

Now, mix the ingredients in to a soft dough with your hands, and form into a ball. It'll look like the picture below. ;)

Transfer to a cutting board, and smash a little to look like this:

Cut into four pieces, like so:

Then cut those pieces into eight. It doesn't matter if they're perfect. It should roughly look like this:

Now, roll those into little dough balls. Like this:

Then, put your dough balls in your tortilla press one at a time. I found better results with putting it a smidgen off center before pressing it out between your Ziploc bag piece (Cut the seams apart on the bag before using), kinda like this:

Once you press out the tortilla, it'll look like the picture below. Throw it on a hot griddle or preheated skillet. I heated mine between 300° and 350° fahrenheit.

Cook 20 to 25 seconds on each side, and you'll get these:

Again, they won't be perfect. I tell myself that the cracks give them a more rustic, homemade charm. But maybe I'm just in denial. :O Anyways, after they've cooked, put them in a tortilla warmer, cool them on paper towels or use them for whatever your little heart desires. 

Now you've made fantastic homemade tortillas! Here's hoping y'all's look better than mine! I can promise that they tasted better than they looked. ;)
