Love, Olivia Do any of y'all go through phases of ABSOLUTELY loving a certain flavor combination? Well, that's been my relationship with caprese recently. I'm totally in love with everything about it. The fresh summery flavors just seem like a fabulous way to celebrate the arrival of spring! ;) Here are a couple of ways I have made it over the past week or so . . . 1) The Classic Caprese Salad In my opinion, a classic caprese salad is the embodiment of simplicity at its very best. Fresh tomatoes with mozzarella, fresh basil, and balsamic vinegar (or vinaigrette dependent on what you have on hand) makes a simply delicious meal. Now, if you feel like switching it up, you can take this flavor combination a step further with . . . 2) Caprese Grilled Cheese! On days you feel like kicking your caprese up a notch, this sandwich is for you. Made of Canyon Bakehouse 7 Grain Bread with Cream Cheese (because you need something to hold it all together), Sliced Tomatoes, Mozzarella, Fresh Basil, and some Balsamic Vinaigrette grilled on a med/hot stove until the cheese is melty. The freshness of the tomato and basil combined with the creaminess of the cheeses, and the crispiness of the bread creates an absolutely delicious sandwich. Love, Olivia I don't usually shop at Ingles . . . mostly because I tend to find better deals on Gluten Free Items at other stores, but last night after Bible Study we had a quick errand to run, and stopped into Ingles to pick up the couple things on our list. While I was there I happened to stumble upon these: If y'all know anything about Ingles, you know that Laura Lynn is their store brand, which usually makes things a bit cheaper. For example, these were $2.99 for 10! Which isn't bad. They smell like fresh waffle comes when their cooking, which is kind of fun. I think their tasty, and may do a review later this week. But, I just wanted y'all to know these were available, because it was news to me. :)

Love, Olivia Whole Foods Market Knoxville opened today, and I am thrilled! While I was unable to make it to the Grand Opening, I did talk about the preview I attended here. There are SO many posts about it, and I promise I'll write one on saving money while eating Gluten Free at Whole Foods once I get better acquainted with the store. Hope y'all had a Terrific Tuesday!!
Love, Olivia I went to Whole Foods Market for a preview tour on Friday, and had a wonderful time learning about the store, as well as the companies core values, product labelling, and ways to save. Here's a few things I learned that I thought y'all would be interested in: 1) Whole Foods Cares about the community, and the planet. And, they have well planned ways to show it through their Community Giving, foundations: Whole Kids, Whole Cities and Whole Planet, and additionally, their Whole Trade Guarantee, and Local Producer Loan Program. 2) They're committed to stocking local products. They want to impact the community they're a part of in as many ways as possible, and stocking local products is part of that. Watch the video on this page. #NewCareerGoals! 3) You save 10 cents for EVERY bag you bring. This could rack up quick on a grocery trip, but what I thought was super cool about it is . . . that instead of just taking it off your tab (which you still can, don't worry) you can choose to donate it to the community charity they've paired up with! So, find a cute bag (maybe this one?) and take it with you on your next trip to Whole Foods!! :D 4) They don't offer plastic bags, and haven't since 2008. Hence the above comment. They do offer paper bags still, but why waste paper when you can bring your own bags, right? 5) They have some great ways to save money. Between the bulk department, coupons, flash and weekend sales, saving money at Whole Foods may be easier than you'd think! Read this blog post by Stockpiling Moms for some additional tips!! Overall, we had a great time touring Whole Foods, and I'm SO excited to explore it more after the Grand Opening tomorrow!!

I'm headed to Whole Foods this evening for a preview tour of the store. :D The grand opening is on March 24, 2015 and I'm so thrilled that we'll finally have Whole Foods here in Knoxville! I'll be filling y'all in on all the awesome things they have available over the next couple days here on the blog, and will periodically have product reviews and other Whole Foods related stuff here on the blog! ;)

Love, Olivia Today I'll be reviewing the Krusteaz Gluten Free Blueberry Muffin Mix. I picked this muffin mix up at our local Big Lots for $3.80, but you can find it on Amazon too, if you want to pay almost $8 for it. :) Flavor: Fantastic. They're sweet without being overly sweet, and they have awesome blueberry flavor. There's no weird "Gluten Free" flavor, in fact . . . they taste just like I remember their glutinous ones tasting. Ten out of ten stars for flavor!! Texture: Quite fluffy. So many Gluten Free baked goods end up quite dense or dry. These muffins turned out light and airy with just the right amount of moisture. Ten out of ten stars for texture. Quantity:
Contrary to the pictures, the mix yields twelve muffins, which is nice. We had them for breakfast three times the week I made them, and they stayed tasty over that three day period.
