What I discovered in my research is Elisabeth had struggled with health issues for awhile leading up to her appearance on Survivor. Then while competing on the show, her symptoms suddenly disappeared -- helping her to recognize that her diet at home was the very thing causing her health issues.
She was formally diagnosed with Celiac Disease a short time after her return from Australia, and she has eaten Gluten Free ever since. But Elisabeth does not just eat Gluten Free, she has also used her influence to become an advocate within the Gluten Free Community. Add to that, she has written a Gluten Free Survival Guide, and a cookbook!
Yet my very favorite thing she's done is through her involvement in founding NoGii! I have yet to try all of the available products, but the ones I have are delicious. Y'all should totally try them. My favorite is the Nuts About Berries bar, but I'm sure the others are just as yummy!! ;)
Overall, I think Elisabeth has done some fantastic things on behalf of the Gluten Free Community and has effectively brought more awareness to this issue. I am very excited to see what's next for the NoGii brand!
